4 oz. unsweetened chocolate
12 oz. semi-sweet chocolate
2 oz. flour (by weight)
¾ tsp. baking powder
½ tsp. salt
4 eggs
12 oz. sugar (by weight)
1 tsp. vanilla
14 oz. chocolate chips
¼ lb. chopped walnuts
- Melt chocolate in a bowl over hot water.
- Beat eggs with the sugar and salt until pale.
- Gently stir in chocolate.
- Add vanilla.
- Sift flour and baking powder together.
- Whisk flour mixture into batter.
- Fold in the chips and nuts.
- Scoop with a level one-ounce ice cream disher. Place 6 X 4 onto a lined sheet pan.
- Bake at 325 degrees for 12-15 minutes or until tops are just cracked.
