Recipe for Guacamole BACK TO RECIPES
(Serves 8 generously as an appetizer)

INGREDIENTS
5 ripe avocados, diced not mashed the juice of 2 limes, more or less to taste
2 medium tomatoes, seeded and diced finely
2 garlic cloves, finely minced
1 small yellow onion, very finely diced
½ (or more to taste) fresh jalapeno or serrano chile, very finely diced, seeds removed salt and pepper to taste
¼ cup cilantro, chopped

PREPARATION
  1. Mix all ingredients gently but thoroughly and correct the seasoning with lime juice and salt.
  2. You may wish to add some of the juice of canned jalapenos to heighten the hot flavors.
  3. You want this guacamole to be spicy and slightly acidic with salt to taste.
  4. Serve with warm tortilla, yucca or plantain chips, lightly salted.
