INGREDIENTS
5 ripe avocados, diced not mashed the juice of 2 limes, more or less to taste
2 medium tomatoes, seeded and diced finely
2 garlic cloves, finely minced
1 small yellow onion, very finely diced
½ (or more to taste) fresh jalapeno or serrano chile, very finely diced, seeds removed salt and pepper to taste
¼ cup cilantro, chopped
PREPARATION
- Mix all ingredients gently but thoroughly and correct the seasoning with lime juice and salt.
- You may wish to add some of the juice of canned jalapenos to heighten the hot flavors.
- You want this guacamole to be spicy and slightly acidic with salt to taste.
- Serve with warm tortilla, yucca or plantain chips, lightly salted.
